Does anyone know of an app (Loxone or other) is available that will provide stats and MI on an installation. For example, when was the heating on in the last 7 days or what was the humidity in the house over the last 24 hrs?

Loxone can record statistics for you https://www.loxone.com/enen/kb/statistics/, and these can be displayed via Config or the App.

You can also log to an external system, although that would require a bit more effort https://www.loxone.com/enen/kb/logger/

I use the external logger to log statistics via UDP to a Raspberry Pi (with a Python script to translate the data, InfluB to store the data, and Grafana to display the data).
